Meal in a Muffin (Makes one dozen)
Ingredients:
- 1 medium carrot, grated
- 1 large apple, grated
- 1/4 cup ghee
- 1/4 cup unsweetened applesauce
- 2 eggs
- 1/3 cup molasses, or honey (or mixture of those sweeteners)
- 2 tsp. vanilla
- 3/4 cup millet flour
- 1/4 tsp. cinnamon
- 1/2 tsp. baking powder
- 1/4 tsp. ginger
- 1/8 tsp. nutmeg
- 1/4 cup shredded unsweetened coconut
- 1/2 cup dates
Instructions:
- Preheat oven to 375 degrees.
- Mix together all wet ingredients and set aside.
- In a separate bowl, mix all dry ingredients then mix both together.
- Lightly coat muffin tins with oil spray. Fill 3/4 full and bake 15-20 minutes or until toothpick comes out clean. Allow to cool on a rack.
