Ingredients:
- 2 1/2 cups almond flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 2 tsp. Xylitol or equivalent Stevia
- 3 eggs
- 1 cup fresh or frozen berries or chopped domestic fruit
Instructions:
- Preheat oven to 300°F.
- Use baking cups to line a muffin tin.
- In a bowl, mix the dry ingredients and set aside.
- In another bowl, mix the eggs, sweetener and pour into the dry ingredients. Mix well. Add the fruit and mix well.
- Using a spoon, place the batter into the baking cups and place in the oven for 25 to 30 minutes. A toothpick inserted into the muffin should come out clean and the tops should be browned.
