Paleo Snack Muffin

Ingredients:

  • 2 1/2 cups almond flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 tsp. Xylitol or equivalent Stevia
  • 3 eggs
  • 1 cup fresh or frozen berries or chopped domestic fruit

Instructions:

  1. Preheat oven to 300°F.
  2. Use baking cups to line a muffin tin.
  3. In a bowl, mix the dry ingredients and set aside.
  4. In another bowl, mix the eggs, sweetener and pour into the dry ingredients.  Mix well. Add the fruit and mix well.
  5. Using a spoon, place the batter into the baking cups and place in the oven for 25 to 30 minutes. A toothpick inserted into the muffin should come out clean and the tops should be browned.
