Ingredients:
- 1 tbsp extra virgin olive oil
- 5 green onions, sliced into rounds
- 1 ½ cups chopped mushrooms
- 1 small red bell pepper, diced
- 1 tsp dried thyme
- 1 tsp crushed garlic
- ½ to 1 tsp turmeric
- 1 tsp sea salt
- 1 pound firm tofu, crumbled
Instructions:
- Heat olive oil in a skillet over medium heat. Add the green onions, mushrooms and red bell peppers. Sautee until tender, about 5 to 7 minutes.
- Add spices, herbs and sea salt; sauté a minute more and stir to coat.
- Add crumbled tofu, mixing it into the vegetables. Sauté 2 minutes more. Add a few tbsp of water if mixture seems dry.
