Ingredients:
- 2 Cups Red Beets, peeled and grated – 1/2 Cup
- 1 Tbsp. Cilantro, chopped fine
- 1/2 Cup Cashews, dry-roasted
- 1/4 Cup Olive Oil
- 1/3 Cup Lemon Juice
- 1/3 Cup Maple Syrup
- 1/2 Tsp Black Pepper
- 1/2 Tsp Celtic Sea Salt
Instructions:
- Whisk the olive oil, lemon juice, maple syrup, salt and pepper in a bowl.
- Add the dressing to the grated beets and cashews.
- Garnish with cilantro and serve at room temperature.
