Raw Cashew and Beets

Ingredients:

  • 2 Cups Red Beets, peeled and grated – 1/2 Cup
  • 1 Tbsp. Cilantro, chopped fine
  • 1/2 Cup Cashews, dry-roasted
  • 1/4 Cup Olive Oil
  • 1/3 Cup Lemon Juice
  • 1/3 Cup Maple Syrup
  • 1/2 Tsp Black Pepper
  • 1/2 Tsp Celtic Sea Salt

Instructions:

  1. Whisk the olive oil, lemon juice, maple syrup, salt and pepper in a bowl.
  2. Add the dressing to the grated beets and cashews.
  3. Garnish with cilantro and serve at room temperature.
