Rajma Stew

Ingredients:

  • 1 (19 Oz) Can Red Kidney Beans
  • 1/2 Red Onion, Chopped
  • 2 Tbsp Ghee Or Coconut Oil
  • 1 Tomato diced
  • 1/2 Cup Chopped Cilantro
  • 1″ Fresh Ginger cut into small pieces or grated
  • 1 Tsp Sea Salt
  • 1 Tsp Red Pepper
  • 1 Tsp Turmeric
  • 2 Cups Water

Instructions:

  1. Heat oil in a saucepan, add onions and cook until translucent and slightly golden brown.
  2. Add tomatoes and cook 2 minutes. Add the spices and cilantro. Cook for 2 minutes. Add the water and kidney beans. Use less water for thicker stew.
  3. Bring to a boil, reduce temperature and simmer for 30 minutes.
  4. Serve with your favourite rice or cooked quinoa.
