Meal in a Muffin (Makes one dozen)​

  • 1 medium carrot, grated
  • 1 large apple, grated
  • 1/4 cup ghee
  • 1/4 cup unsweetened applesauce
  • 2 eggs
  • 1/3 cup molasses, or honey (or mixture of those sweeteners)
  • 2 tsp. vanilla
  • 3/4 cup millet flour
  • 1/4 tsp. cinnamon
  • 1/2 tsp. baking powder
  • 1/4 tsp. ginger
  • 1/8 tsp. nutmeg
  • 1/4 cup shredded unsweetened coconut
  • 1/2 cup dates
  1. Preheat oven to 375 degrees.
  2. Mix together all wet ingredients and set aside.
  3. In a separate bowl, mix all dry ingredients then mix both together.
  4. Lightly coat muffin tins with oil spray. Fill 3/4 full and bake 15-20 minutes or until toothpick comes out clean. Allow to cool on a rack.
